I believe that as a PR you can work in your desired field. The only caveat I can think if is if you are contracted for a particular length of time with your current employer, then you're obligated to that just as any other citizen or PR.Hi all,

After becoming PR through the Canadian Experience Class, does a person need to work under the same NOC they used in the application, or can they have a complete change of career and work any job?

Even if a PR have had an LMIA-based job offer at some point but no provincial nomination or stream-specific conditions, they are free to change employers at will.From my understanding, If you didn't apply through Provincial Nominee or LMIA you do not have to remain with your current employer.
You are free to switch employer.
