Work Experience Query - URGENT

I hope everyone is staying safe in these crazy times. I'm thinking of going through express entry and had a few question:
Profile: I've around ~2.8 years of experience as a Software Engineer with MS in CS from Top-10 Schools in the US.

Question:
(1) Is it required to get the work experience letter from literally every place I've worked ?
(2) If I'm claiming that I've 2 years of experience, is it alright If I get experience letter to support that I've 2 or more years of experience ?
(3) After ITA if I get denied due to forms being submitted, can I still reapply to the pool ?

1. No. Just the places you are claiming work experience from.
2. Yes
3. That depends on the reasons for refusal (misrepresentation could get you banned from applying to Canada up to 5 years). You won't get denied after ITA per se, you could after AOR.
