Does your sponsor still have the power to withdraw your application after you've done landing interview and your application it has been approved just waiting for your PR card in couple of weeks?
As @Will_PA said, the landing interview is the last opportunity for the sponsor to withdraw the sponsorship application. After landing, you are a PR (having the card or not) and the undertaking is valid for three years whatever happens to your relationship.

I just received a letter in my CIC inbox stating that my wife "meets the eligibility requirements to apply for permanent residence as a member of the spouse or common-law partner in Canada class."

It's weird because it reads almost as though I should have received it at the beginning of the application process, not now almost a year later ("a final decision will not be made until all remaining requirements for becoming a permanent resident have been met. These requirements include medical, security and background checks..."). The last communication was in April when my wife completed and submitted her medical.
This is AIP, it comes quite at the end of the process. With this letter, your wife can register to the provincial health insurance program.

Great news, I was afraid you did not notify CIC when you landed (or before), that would have made you ineligible to sponsor your spouse.

So to answer your initial question regarding the status after the OWP expires. As your spouse currently has an OWP and that your spouse will apply for an extension of the OWP, your spouse should be on implied status between the expiration of the current OWP and the time CIC reach a decision on the extension. The very important thing is to apply for the sponsorship and the OWP extension before the current OWP expires.

On implied status, your spouse is allowed to continue working, however some employers will refuse to keep the employee until they show a new valid work permit. If that's the case, I suggest bringing proofs you applied for the extension prior to expiration and you can show this link to the employer:

What kind of supporting docs i can provide for OWP, as i am submitting Sponsorship Application and OWP application together.

As i was reading document checklist, there is a note saying If you submit an application for PR provide proof that your application is received or approved in principle.

But i don't have any proof yet.

So what can i provide.
Sending them (pr and owp) in the same envelope is the best way.
We never did it ourselves as my wife was on a study permit here. So somebody that did apply for an OWP extension together with a spousal sponsorship, please jump in this conversation to help @Simar71011

Oct 24, 2017 applicant here. I received my landing interview letter today! Unfortunately, I need to reschedule the interview because it's conflicting with my clinical placement schedule, but I'm happy this long process is coming to an end really soon! Good luck to you all!

I think your file was probably received by them on Nov 16, but AOR takes anywhere between 6-10 weeks. It's impossible to get the AOR within two days.

Wow what a week .. first AIP Sept 11 and than Work Permit Approval Sept 12 and now this Today Sept 14

This refers to the Application for Permanent Residence you made under the Spouse or
Common-Law Partner in Canada Class.
We are pleased to advise you that processing of your application has been completed. The
Immigration, Refugees and Citizenship Canada office in Vancouver Immigration will contact
you to arrange an appointment for the finalization of your permanent resident application.
