I've noticed that people have been receiving their OWP's before their sponsor is even approved (AIP).
In theory, what happens if my common law partner receives his OWP, but afterwards we are denied because we didn't have enough proof for being considered common-law? Can he work under the new OWP or will that be void? If it is void, can he continue to work under his Working holiday visa which is valid until November or would have that been voided when he was issued his OWP, prior to being denied?

I hope that question makes sense.

All OWPs are recieved long before AIP unless the applicant is out of status.

The OWP remains valid.

Sorry, are sponsors approved before OWP's are issued? Or is sponsor approval the same thing as AIP?

The OWP issuance doesn't have anything to do with sponsor approval. AIP is not sponsor approval.

Yes. Generally for 2 years.

Okay so on this IMM form checklist for an OWP: https://www.canada.ca/content/dam/ircc/migration/ircc/english/pdf/kits/forms/imm5556e.pdf under "Documents list", it has two check boxes for LMIA. My common law spouse is currently on a working holiday visa and as far as he knows, his employer did not require a LMIA to hire him (he was hired as a product designer/engineer).

Then on this form which he also has to fill out for the OWP application: https://www.canada.ca/content/dam/ircc/migration/ircc/english/pdf/kits/forms/imm5710e.pdf it asks for his prospective employer. If he was applying for an OWP while on visitor status, I'm assuming he would have put N/A everywhere. But since he is currently working and intends to stay with that employer at least until his OWP is granted, should he fill in his current employer under "Prospective employer (attach original offer of employment"? And also include his original job contract?

All N/A. He doesn't list his current employer or include a job letter.

As I already said, don't list the employer. Open Work Permit = no specified employer.

So we tried doing this, but the form doesn't let us write N/A online. Is it okay if we just leave it blank, generate the bar codes, and fill in N/A with a pen once the form is printed?

Apologies for all the questions - I really appreciate your patience and help.

Hopefully the last question but do we put all the extra documents (like pictures, lease, etc) under each corresponding IMM form? Or does it all go under the IMM 5589 checklist?
