Guys as per your knowledge, how important of parent's ITR (Income tax return document) is, if they are sponsoring for your studies, especially for Non-sds students?

as per my knowledge, it's of moderate importance. although it was listed on my checklist provided to me by my counselor i didn't include one with my application file, it all depends on what your parents profession is really, i think. i've seen people getting approvals without providing income tax return documents. hope this helps.

What if someone's parents are government employee and earning well and if student can only pay 1 semester fees + GIC and show ITR of their father?

What's your thought on this?
 
well, unless you have an unreasonable program of choice i say you're good to go but be sure to show some assets (land/property/apartments), it helps bridging strong ties to your home country. my friend's refusal was mostly because he didn't include any of that. his parents were well paid government employees as well + paid tution fees of an year in advance.
