Yes, of course they read the letter of employment. Job duties/responsibilities are the most important part of the letter of employment. They can also contact the employer for verification.

You lose the points. If you then fall below the threshold for your draw, you become ineligible. If you remain above the threshold, it doesn't matter.

What do you mean "since we would still be above the threshold..." How do you know this? And if you DO know this, why bother with the hassle when you can leave it off your profile entirely?

You don't actually have to submit the contract, the letter of employment/reference is the most important document.
For what she actually does she definitely falls somewhere between 1431 and 1331, no doubt about that.
Unfortunately, if her job title is Accounting Clerk - despite the fact that we always say "job title doesn't matter, go by the duties/responsibilities" - the VO will likely assess it at 1431 unless the letter clearly indicates a position closer to 1311 (btw, not 1331).
