Most banks know when you ask them that you need a proof of funds certificate for immigration, they are used to sending it for US immigration, so you should clarify to them that you need for Canadian immigration. Better still ask them to address it to nobody, otherwise you will see subject such as "To the Department of Immigration, United States..." The certificate states the amount you have on the date they issued the statement, it does not contain any details and merely states your account number and amount held.
For the second question, a lot of people on this forum have different opinions, I went with my lawyers and paid them extra ( a credit card fee) to procure the draft in CAD from a local canadian bank. The CIC has a page on what amount to pay in USD (http://www.canadainternational.gc.ca/new_york/imm/fees_frais_usd.aspx) if you can only pay in USD.
Do not panic, you should be able to do this
