How long are supporting documents valid for? I see that police certificates are valid for 1 year and 2 years for language test, but what about other documents such as employer reference letter and identity/civil status documents?

Any original documents requested will have certain validity times. Copies of requested documents should be just current, mostly.

Because your criminal record and language skills can change.

All that matters is that the experience in the letter is within the last 3 years. Identity/civil status documents are valid as long as identity/civil status don't change.
