You'll need Ontario Experience if you apply under skilled trades stream. Go ahead and apply under Human Capital Priorities Stream and no experience is required.
You NOC will come under skilled trade only if you have experience, if you don't have you fall under HCP stream. Its as simple as that.

I have same situation as you, I emailed and called onip. They responded that we can add spouse to the onip application.
I think you're wrong. You can see that they updated their website today https://www.ontario.ca/page/oinp-express-entry-notifications-interest It clearly states which stream they invited people under. If they invited people under skilled trades stream and you go ahead and apply for HCP, it's a waste of your time and money.
The email was few days ago. I've asked around to multiple people and this is the consensus so I'm not going to apply because they clearly say what stream they invited the candidate under. If you go to their website and see the qualification guide, there is a very strict criteria so yeah I don't think we'll be picked if we don't satisfy that. However, you're free to do as you please.
Now, after they have updated on their site, I am also confused. I have also sent a mail to them. But frankly speaking, there is nothing mentioned in the interest letter we received in EE profile. Also, it is clearly mentioned in the HCP application guide:
"Please note that your NOI will not indicate the stream under which you qualify. It is your responsibility to review the criteria of each Express Entry stream to determine which one you are eligible to apply to. "
I will wait for the answer to my mail and if they don't answer clearly then I think it is worth to give it a try.
