Ways to gain Canadian Experience

I am on closed work permit and lost my job. I am 2 months short of getting one year experience for Express Entry. Getting a new job with closed/open work permit seems difficult at the moment. As I look for the job, is there a way for me to gain 2 months of experience working or volunteering anywhere? If I can volunteer without pay in my existing permit AND add those in the EE portal, what would those jobs be?

Unpaid volunteer work cannot be counted as work experience.
