When do I need to provide documents to support foreign work experience when applying through CEC?

Documents checklist for CEC doesn't say anything about foreign work experience, only experience in Canada.
Will foreign work experience documents be requested at a later time by an officer?

No. CEC is all about your Canadian Experience work history. It has nothing to do with your foreign work experience.

But if you claim years of foreign work experience in EE profile to get a higher score, it will need to be verified at some point, isn't it?

Yes of course. You will need to be insured for the period of time you were working in the foreign country. Also you will need to provide reference letters and pay stubs.
