I have Canadian passport, I am trying to sponsor my spouse to become permanent resident. When going through the checklist from IRCC, I see a birth certificate as general document and another country specific for China a notarized copy of the medical certificate of birth issued by the ministry of health of the People’s Republic of China. So the normal birth certificate(translated) and another notarized (and translated) medical certificate together for the birth certificate I guess?
Another required document "hukou", which only reflect her marital status in the past as single. Do we need to go back to her hometown and do all the updates for this document, or simply explain we just married in Canada and didn't return to China to do any update?

Not an expert on China documents etc., but it is almost certain that IRCC does not care about the hukou document being updated to reflect marriage status (at least if married outside China). Instead most likely just part of the unique ID requirements for the country ('unique' here meaning just ability to identify an individual against other individuals).

Compare with countries that have 'family books', internal passports (eg ex-USSR), etc - while they are/can be important for reflecting immediate family members (esp children) and in some circumstances (usually domestic to that country) marital status, they're also important identification documents (both the person and their current/most recent address).

So in your case I feel confident saying this does not need to be updated for the marriage - as long as your marriage docs otherwise in order.
