Yes - you can apply for Express Entry provided you have valid status in Canada (assuming you are in Canada right now).

Right - no need to report your job loss. Just make sure you don't go on social assistance. EI is fine.

To word the question differently. I'm scared that as the sponsor, I currently don't have a job due to Covid, that it might affect our application. And worried whether or not I should report this information.

I understood the question. Again, there's no impact. Sponsors are not required to be employed. You just can't be on social assistance.
