Hi, I am in the process of applying for permanent residency, but as of now, when I am in Canada it is just as a visitor. I was wondering if I can open a bank account without being a resident or having a Social Insurance Number. Alternatively, I was wondering if I can just be added to my wife's checking account; she is a Canadian citizen who has already relocated.

Any info would be greatly appreciated!

You may do either of these. Canadian banks do require that you establish positive identity, but they do not require you have an SIN. If you open an interest bearing account, you should obtain an ITN (like an SIN) from CRA so that you can file any tax returns that are required.
