Also will he b able to travel with us to canada with a tourist visa?

No - he won't receive any sort of stamp.

He can try applying for a TRV to travel with you to Canada - however the chances are quite high the TRV will be refused since IRCC will guess he is not a genuine visitor. If he already has a TRV, then he can travel with you but must ensure he has a return ticket.

Our entire family would be going to canada for 1 month.. we to collect our PR card and my husband as a tourist. Will his status of being my non accompanying dependent be any sort of problem for his or our travel?

It shouldn't be a problem as long as he has a return ticket.

Hi Fareha
I would like to know what reason did you give for spouse non accompanying. Good that your PR has approved and you have the copr. I am awaiting ppr and I had applied with spouse not accompanying. Grateful if you could give some insight on the reason you provided. I have stated that my spouse will be sponsored later as he will continue to work in our home country and I will settle in canada first.
