I know after you submit an application to IRCC, you have the option of uploading additional documents using the web form. My question is - Is there some kind of a limit as to how many times you can use this? Can you just keep gradually adding more documents? Or do they give you a limited number of chances to do it (at which point you cannot upload any more)?

You can submit as many webforms as you want. There's no limit that we are aware of (unless, there's some per applicant storage allocation limit that you hit <- unknown territory).
