You can include everything if you can get reference letter for the same. However, you only need 3 years of work experience.

You earn points for a maximum of 3 years (foreign work experience) and 5 years (in Canada experience).

Anything you include in the profile, you will have to document. So you should include as much experience as you need to maximize points, but not make a headache for yourself : )
