If someone gets approved for a visit visa, and they put dates in May, but instead they come in July (obviously within valid period of visa as it’s 5 yr), would that be an issue upon port of entry?

the May dates are both in the application and in the invitation letter — and secondly, do they require a return flight booking upon entry?

There's no issue coming at a different time. If you hold a regular TRV, then yes, you should really have a return ticket or you may have issues boarding your flight or entering Canada.
