What should I write as the starting date of the work permit? The first day of the 5-year eligibility period or the actual date?
My actual date is before the eligibility period started

Some people are saying it doesn't matter what you wrote they will only count days only from eligibility years is that true?

In physical presence only 5 year period matters. But WP start date would be your actual date if it allows you to do that. If it does not use the start date of the eligibility period.

Actual date i.e. the date on which you received the WP in your hand
Last date will be a day before the actual date you became a PR
