for CEC : We need to provide facts that proves that you have worked in Canada claimed in EE profile. Most of the cases it will be record of only one employment .
for FSW: We need to provide Employment records for last 10 years and not the latest . Means reference letter from all employers during the period.

It doesn't matter there's EE or no EE, they are all the documents you need to have for each category. You should know that EE is not an immigration program, it's just a system to select candidates for PR faster. All the processes to apply for PR after you get ITA are the same.
