Hey,

My wife and I just sent the application for sponsorship and immigration and it arrived in Mississauga this Monday.

My wife is very paranoid that Canada will refuse us based on what we sent and wants to send more proof.

Is it possibe for us to add additional documents to our application and if so, how can I go about doing this?

You can't send anything until you get the overseas file no. If you send it to the overseas office without their file number, the documents will probably never reach the file.
