In my opinion, you can apply for SOWP. It will not affect your PR processing.

I applied on 5th Oct 2020, and it got approved 1st Feb 2021.
Biometrics were done on 15th Nov, 2020 and medical was required as well which passed on 30th Dec 2020
So your wife and you need to re-do medical 2 times, am I right? or its just automatic renew?

Mine was already expired and my wife's was about to expire in February when i got a call in January from the officer handling our file. This was for the pr application. He told me that only medical is left on our file, rest everything is done.
I told the officer about my wife's medical, which she had done in December in support of her visitor visa. So, he updated the same medical and biometrics from the visitor visa application into the pr application. I had to do the remedical as my first medical was done in May 2019 and was expired.
But even after both our re-medicals were updated, nothing happened for a month and we got the copr only after my wife landed here in Canada.
They will issue copr only when outland spouse becomes inland.
