So I graduated back in October 2020, applied and was approved for a PGWP for 3 years. I also applied for permenant residence under the FSW-inland stream and my file is in progress, I expect to be granted PR status by June-July. My question is, I'm currently enrolled in CPA preparatory classes (part-time), my study permit does not expire until Nov 2021. Am I okay to keep studying and working at the same time? (obviously until either my permit expires or I have my PR card)

Your study permit is not valid since you already graduated. You don't need study permit if your course is less than 6 months.

I guess technically the PREP courses that I need will take me just shy of 6 months to finish, so I should be good until I'm done with those. Do I need to notify IRCC about them?
