I’m not an experienced person but it’s good to consult with a lawyer after you complete your study and before you apply your wp. You have 180 to submit pgwp application so you have enough time to sort this . But I think you should ne fine as long as you took continuous semester not less than 3 courses each . Better to get a good lawyer at there is always risk to apply yourself.

I’ve only taken two Spring semesters off and was enrolled for every Summer and Fall since I started schooling

In bc you need atleast 3 courses per semester to be a full time student. If you took 3 courses in summer semester you will ne counted as full time student for spring semester. Sometimes the courses are 2 months long sometimes 4 months. If they are 4 months long and you took 3 courses then fine but if you took only two months courses they it’s a issue.

I took the 4 months long semester in Summer
 
Disagree with this. It is pretty clear that you can only be off during schedule breaks which for SFU is the summer. It also appears that you may have worked during the winter. Unfortunately you don’t meet the requirements for PGWP. You should certainly try to explain but you can’t count on pgwp being approved.

SFU doesn't have scheduled breaks. Some programs may, but the university doesn't. Each semester (Spring, summer, fall) is a "full semester" - it's called a trimester system. It's hard to understand if you've never studied there, and hard to explain in the context of immigration rules. The OP may actually be okay taking springs off in terms of full time eligibility, but the illegal work is a big thing.

The trimester system is also unlikely to be understood by the visa officer and may result in a rejection just due to misunderstanding.

Could be wrong then. I would explain the trimester system because yes most VOs may not be aware since most universities operate limited courses in spring/summer that are optional to attend in most programs so most students try to work from May to September.

Well, I studied there for five years, so I'm pretty sure I'm right about the trimester system.
