I am a Canadian Citizen (been in and out of Canada) and my wife is an Indian citizen. I have applied for PR for my wife under Family Class. My application is in New Delhi and I have received a letter from them asking me to provide more information like her appointment letter from employer, rental agreement, mortgage deed etc.

Has anyone received a letter like this from the Immigration? If so please let me know how to respond to this.

Yes - this is normal. One of the requirements for sponsoring your spouse if you are either living outside of Canada or spend a great deal of time outside of Canada is that you prove (provide evidence) that you plan to relocate to Canada once your spouse's PR visa is approved. This is what IRCC is looking to confirm. If you are largely living outside of Canada, then ideally you should have provided this information / evidence with your original application package. You should respond with evidence that shows you have ties to Canada and plan to move here once the PR visa is approved - this includes what's in the list from IRCC but can involve other evidence as well.
