I want to know about pay stubs experience. Is it in demand in sinp and pnp

So to prove work you need experience letters, paystubs/slips, bank statements and taxes paid. As for EE, look at past draws and scores for healthcare with that NOC. Think around 470. For SINP, your education matches the NOC with your job offer. For PNPs, I don't know which province you work in or have a job offer. Read through the SINP site.
