You need references from your clients, contracts, taxes, business registration, online presence like website, etc.
Just be aware that it's really hard case to prove this kind of experience even having all of these, and basically most often it's on officer's discretion.
How “long have you been in Canada and on what status? Do you have any customers or clients in Canada? Assume you are trying to claim points for foreign experience. As you also trying to claim Canadian work experience at the same time?
It is incredibly dependent on what business and what your end goal is. Also whether you you can show it will benefit Canada. What your life is like now and your future prospects in Dubai and in your home country are also factors. If your longterm goal is immigration have you looked whether you would likely be able to secure PR and how long it might take. Currently getting PR as someone who is self-employed is difficult although a new immigration program is likely in the works.
