Yes, you can do a walk-in and get SIN instantly. I applied online, I got new SIN in 2 days.

Health insurance depends on your province. In Quebec you can get a new RAMQ card online as well.

I think last time I applied (a few months ago after extending my WP) I also waited 10 days... So maybe you just got unlucky

I applied online for SIN change of status and opted to get SIN digitally in MSCA instead of paper format. Applied on 30th July and got it today. Walk in may be possible but depending on crowd they may not allow. Yet to update health insurance.

I literally walked in a service canada, 10 mins after my eCoPR came and a registry right after haha got them all done right away

you normally get it in like 5-10 minutes, they just ask to confirm what you already have on file. I also found out that your MyCRA and MSCA online logins have to be re-registered once you get the new SIN.
