One quick question - since we are selecting open work permit and not providing employer details, doesn't it contradict if I mention otherwise in the letter of explanation? I understand the procedural part, but just want to make sure that's the right way.

Don't provide any employer details on the form. You will confuse the officer and make it sound like its a LMIA application with Employer job offer. Just leave that portion blank. The instructions is clear: if you choose “Open Work Permit” or “Post-Graduation Work Permit”, leave questions 2 to 8 blank. https://www.canada.ca/en/immigratio...onditions-extend-your-stay-canada-worker.html
