Italians are allowed a six month working holiday visa only. It's a one-time participation.

If your employer can give you a full time job offer and obtain an approved LMIA, they you can apply for a closed work permit tied to that specific employer. It tends to be difficult to find employers willing to go through the LMIA process since it's so long and expensive. Plan on the LMIA process taking 4-6 months to complete.

You can also apply to convert your status to visitor if you want to stay for a few more week or months. Of course you won't be able to work.

Another option would be a study permit - although this is very expensive since you have to pay foreign student fees.

If you are interested in immigrating to Canada, then you'll need to research Canada's immigration program here: http://www.cic.gc.ca/english/immigrate/apply.asp
