I am thinking of earning my degree online from a university here in Mexico. Both institutions are well known here and accredited. One option is TecMilenio and the other is Universidad del Valle de Mexico. Its between accounting and business admin.

My question:
Will my degree be recognized by the Canadian Gov. and will it add points to my SW / Express Entry program?

you need to check it with the companies that do the ECA report for IRCC (CIC). try talking with WES,

Online degrees have not been favorable for ECA but you can check with the credential evaluation agencies to see if they will comment on your enquiry.

Im studying my bachelors degree in bussines administration in Unitec in Mexico, does anybody know if it will be evaluated by Wes? I don’t need it for immigration as I’m already PR

Im not graduated yet, so I don’t know if they will ask but some people have mentioned to me that to have a strong resume I need to do Wes. So that employers can see the degree is equivalent to a degree in Canada.
Is this true?

No, employers don't care about WES. Canadians employers look for Canadian degrees and other famous world universities. Your degree from Mexico will not help you unless someone Mexican recognizes your school

Agree with @Impatient Dankaroo having WES has no meaning for Canadian employers. They will not care that you have ECA. They will only care if they recognize the university’s name and reputation. What will help you is Canadian work experience and education.

I have work experience in that area but I would like to have a better job when I graduate

Good, you are asking the right question now. They don't or struggle hard to find a job in their field. Many start with survival jobs and work their way up by connecting with people or moving up in their organization. Many others will be stuck there forever

Having a Mexican degree with foreign experience will not get you a better job in Canada. You may have to work low paying jobs and work your way up. Most people who immigrate start off with survival jobs. Some never work in their field or leave. A good article to show that employers don’t consider foreign degree or experience.
