You can definitely choose your actual domain as your NOC, actually that's what people have recommended me to do. You can mention in the cover letter that your skill as a postdoc falls within that specific NOC category (with the reference letter from your employer as the supporting document).

You don't need to upload anything for your medical. You can call your doctor to check whether/when he/she uploaded your medical results. In the meantime, you can also order GCMS notes to see if there are any detailed notes on your file. Don't worry too much and good luck.
