Work permit expires Feb.2012 unable to find suitable work

I graduated in 2009, and have been trying to find suitable work in the noc categories. I am working as a deli clerk since 2009 and I know it doesn't qualify under the CEC. Though my title is a deli clerk I have more like a supervisor job duties like look after about 4-5 other employees, supervise and close the department, receive inventory and stock it etc... Could I get a letter from my employer stating my job duties and apply for the pr.

I was wondering what are my options to apply for a PR and since my work permit expires in Feb can I go back to school I'm case I can't apply for my pr.
