have you claimed points for a valid job offer? if yes, you have to prove it by uploading that document. I dont have a valid job offer in canada so i didnt have that place holder.

I said yes before ITA. Should i say no now? do i need to explain even if i did not claim any points for arranged employment ?

You can explain if you feel like it, it is a simple mistake that does not impact your score or eligibility.

But yes, you should answer "no" to the very first question and the placeholders of letter of employment and offer of employment will disappear.
