I noticed on my Visa office checklist that they request work references for applicant AND spouse??
Why would they want my wife's work references when she is not the principal applicant?
Any ideas?

perhaps for security check. i am guessing.

But do they verify Spouse work references?

Incase they do and after verification somehow they found spouse work reference to be false, can they decline application of the principal applicant on that ground?

anything that is false can be used to decline an applicant. Thats what i think anyway.

Spouse education and work is being asked to check your family's level of Adapability in Canada.

there are 2 reasons actually.. and both of them have already been mentioned.

1) in schedule 1 of spouse, it is claimed that the spouse has been working. so, it needs to be proven to ensure there is no misrepresentation.
2) a working spouse does not earn points, but it ill give a notional edge of adaptability to the IO to approve borderline cases.

As far as letters of reference are concerned, I don't think they are necessary from spouse's perspective. employment contract and salary proof should be good enough...

The Main reason is Adaptability, as the main aim is to get the future "PR" economically established in Canada ASAP.
