Hello, I'll explain my status and in hope that the helpful people in here could guide me in the right direction.

I'm currently live in Canada Ontario
My spouse has a study permit. I have a visitor record to accompany my spouse.
I have high level English skills (need to be tested)
I'm have a Masters Degree in Software Engineering (English education)
I'm from the Middle East
I have over 5 years of experience as a software engineer
I have also founded companies and had off-time where I worked on side projects
I am the creator of some semi-popular software products
I have enough funds to live for a few years
If employed, would probably have one of these titles: Senior Software Engineer, Engineering Manager, Project Manager
I might be creating a USA based company soon and get funding from US investors

Express Entry/Federal Skilled Worker

If you can get an open work permit while your spouse is studying and get 12 months of work experience you can then qualify for Canadian Experience Class

?

Do I have to be employed by a Canadian company?
Is it only fulltime work or does parttime count as well?

Sounds like you need to spend a lot more time researching if you are serious about immigrating.

EE/FSW does not require Canadian work experience. CEC does.
No - you don't have to be employed. Both full and part time work experience counts.
