Just wondering what the maximum amount of time I would have before I would have to land in Canada (or risk my PR visa expiring) from the day my application is approved?

I am up to the stage of submitting my medicals being requested, so just wondering how long it will be from the time they approve my PR until I have to be landed.

I'm assuming it's "within 12 months? Correct?

After receiving your PR it is valid for 12 months.

Unfortunately, this is not correct. It's usually based on the expiry date of your most recent medical examination. It can vary from a few weeks to almost a year. The expiry date will be written on the COPR document, and is not extendable.
