Already in Canada, I am super limit regarding deadlines (current work permit expires in 4 weeks) for my EE application and I am still waiting for WES credentials. If I apply now for the visitor record as a back up to ensure a legal status at the end of my work permit, will I still be able to apply for the bridging open working permit (BOWP) in case I am able to apply for Express Entry before the end of my WHP?

You have to have a valid work permit in order to apply for a BOWP after receiving your AoR from Express Entry. Converting to visitor status will not do it for you.
