I asked this question on the visitors forum but I didn't get any reply, I am wondering if someone here can help me.

My wife is here on a TRV, I started the sponsorship process and that is going OK

Her status was about to expire on Dec 1 but we already sent the paperwork for an extension.

She started ESL Oct 1 so she has been studying for less that two months

I know that she is only allow to study 6 months minus a day but since she is getting an extension is she allow to continue studying up to that time.

i think she is not allowed to be enrolled in a course that is of more than 6 months duration...look up the rules on the canadian immigration website sb there
 
CIC SAYS

"Can I work or study during my stay in Canada?

Visitors are not allowed to work or study in Canada unless they are authorized to do so under the Immigration and Refugee Protection Regulations. In many cases, a work or study permit will be required.

A temporary resident may also take a program of study up to six months duration without having to obtain a study permit.

So I think 6 months is the max unless you wife applies for a study permit.
