So in my current situation and schedule, self-employed online work such as writing or affiliate marketing or blogging is basically my only viable option for having an extra income (I have good student loans and savings but don't like to fully depend on it) and it fits nicely to what I like doing and the field I want to work in later as experience. So I want to go for the self-employed route.

This is not a question of how to break any rules or how often things are checked, that's NOT what I want to do.

But how with true self-employment (Not like Uber or Doordash which still record your hours) do you record your own hours in an official way so that it's clear you didn't exceed the hours and does it lead to additional problems when applying for a PGWP (extra investigation) or when I do want to switch to a contract position? I'm very afraid to make a mistake here and it sounds so unofficial just to make my own excel sheet.

And what happens when you sell something like with an online shop?

Any personal experiences on this?
