I am wondering if the EE system allows to switch between streams. If I was only eligible for FSW now and I entered an EE profile, when I become eligible for CEC next year will the EE system itself determine the stream applies to me or do I need to open a new profile? Thanks.

You will get an ITA only on the basis of which stream you are eligible for at that point in time. Once you get an ITA under a particular stream, you can't change the stream
If next year you'll be eligible for both FSW and CEC and, for some reason, you want to ensure you get an ITA via CEC (though which stream you get your ITA in doesn't make much difference to application processing) you can try setting your available funds to zero and that might make you ineligible for FSW thereby ensuring you get invited under CEC.
