Supporting documentation for work experience

I have the following questions:

1) what supporting documentation besides the letter (stating the hours, employment period and job duties) must the applicant provide to prove their work experience?
2) does it matter if a person has over 3 years of uninterrupted work experience but in two different NOCs (both of which are type A)? or does NOC have to stay the same throughout the time period for which the points are claimed?

1 - Nothing that you "must" provide but common things to provide are pay stubs and T4's.
2 - It's fine.

Also, is it okay that it was on a constantly renewed short-term contract that the experience was earned?
