Are you already married? If so, was your wife included as a non-accompanying dependent in your application?

If you are not yet married, when do you plan to get married and when do you plan to land in Canada and officially become a PR?

Yes. I am already married. Added her name as a non-accompanying dependent in my application.

Planning to land in Canada probably early next year early.

You can sponsor her as soon as you arrive in Canada. Note that as a PR, you must be physically living in Canada when you sponsor her and you must also continue living in Canada while the application is being processed. You can take occasional short (2-3 week) trips outside of Canada. If you leave for longer - you can expect the application to be refused.

Your wife can apply for a TRV to visit you in Canada while the application is being processed. There's a good chance the TRV application will be refused since CIC will know she has plans on remaining in Canada long term. So it's quite likely you will have to live separately while her PR application is processed.

Details on how to apply here: http://www.cic.gc.ca/english/immigrate/sponsor/spouse.asp

How many months more take after medical for visa in family class sponsor spouse
It varies from visa office to visa office. Please post your question to the thread for the visa office your application is being processed. Please don't hijack someone else's thread.

Thanks @scylla and @canuck_in_uk

While checking my wife's documents, we found out there is a spelling mistake on her mom's name on birth certificate. And even name on her mom's degree certificates are also wrong, which makes it impossible/very difficult to correct my wife's birth cert.

Will this affect the sponsorship process or in any other way in future? Please advise

It will not affect the process; list her correct name in the app and include a letter of explanation.
