There's no law restricting you from gambling and windfall income from gambling related activities are tax free. The real question - is this the right thing to do given a student on limited income as is.

The key issue seems to be whether it counts as “work,” which it usually doesn’t. Has anyone here ever been asked about betting or gambling by IRCC during an application or interview?

I’ve never been asked about casual betting by IRCC. From what I’ve seen, they focus on employment, not personal activities!

The laws of Canada are quite loyal in this regard! The main thing is that you are already 19 years old, although in some provinces, such as Alberta, you can play even from 18. I myself once studied abroad and also experienced similar legal trifles with visa status. To better understand all the local nuances and rules of different provinces, I recommend reading the excellent article how gambling works in Canada where the authors have clearly analyzed all the regulatory aspects. And which province are you in now, because the permitted bookmakers may differ slightly in each region?

If you are not doing this as a professional privateer and this is not your main source of income for the tax office, then there will be no problems with a student visa.
