While EI benefits does not disqualify you for sponsorship of your parents, it can affect your qualification for LICO minimum requirement. EI benefits only cover about 55% of your regular employed income. That can seriously impact your ability to sponsor your parents especially if EI is your main income for the year. As long as your annual income including EI meets the LICO minimum requirements, you can qualify to sponsor your parents.
