Is it possible to sponsor 2 people in different classes? I am currently sponsoring my common-law partner and I want to know if I can sponsor my 31 year old son who has diabetes 1?

You can't sponsor a 31 year old son anyway.

Yes, but he is still my son and depends on me to make sure he takes his insulin and monitoring his glucose levels

Not even close to the required level of dependency. The dependency has to be profound. Does he have any other fundamental disabilities?

https://www.canada.ca/en/immigration-refugees-citizenship/services/immigrate-canada/age-limit-requirements-dependent-children.html

Dependants over the age limit
Children 22 years old or older qualify as dependants if they meet both of these requirements:

  • they have depended on their parents for financial support since before the age of 22, and
  • they are unable to financially support themselves because of a mental or physical condition

Young children manage their own insulin shots and glucose levels. Unless he has some serious mental illness, a 31 year old is perfectly capable of doing that himself.

One other thing... I'm assuming that you are or were a Permanent Resident, or your son would be Canadian, and we wouldn't be discussing this.
Was your son declared in your own PR application as a dependent and medically examined?
