Would the Visa Officer be offended if I submitted bank statements with the account number blurred with watermark? I feel uncomfortable giving all such sensitive account information.

Visa officers consider visa applications objectively, simply based on facts and evidence. Why would s/he get offended if you blur your bank account number?

But why do you want to take a risk and make it look like your evidence has been tampered/not genuine?

A visa office can seek secondary confirmation/information directly from a bank(s) if it doubts the veracity of the documents submitted
