Running own business after quit the job.. which docs to submit

Hi,
I request all senior and expert forum member to help me with my query.
Here is my situation:

I have selected NOC in which I have 7 years of work exp during last 10 years.
and it has all supporting docs such as reference letters, appointment letters, promotion letters, pay stubs etc.
I left this job in mid-2014 and now I have been running my own proprietorship business since last 1.5 years. It is consultancy business.

So, what should I mention about this business in work history section of EE profile?
and if I get ITA, what are the supporting documents I should provide for my business?

I know it is too early as I have not received any news from any ITA, but if I get knowledge about these documents, I can prepare those documents well in advance just to avoid last minute hiccups.

I am claiming points of work experience for my other NOC having 7 years work duration.. This work experience is prior to my business and it is not from this business work experience
..
so will it be okay if I delete it from my work history..
will it not create any issue afterwards..

If I am not showing my business experience in my work history, Do I need to provide any supporting documents regarding to CIC, when submitting e-application..?
