I have a question that after coming to Canada, if I still need few months to meet 730 days requirement and PR card expiring in one month. Meantime (after five months of struggle) I have a job offer from an employer of my profession but in its questionarie he is asking " are you legally entitle to work in Canada". My resume clearly says I didn't meet the requirement. Employer is also asking for copy of landing paper/ PR card. Confuse what to do, this is my opportunity to get back to my profession in Canada.

Is any way employer will share my information to immigiration? another thing to worry about since at the end of the questionarie there is consent required asking to agree on disclosure of information.

I asked one my friend he says this is normal, nothing to worried about good employers usually ask for all this information.
 
Your friend is right. For now at this moment you are legally entitles to work in canada for any employer. You cannot dictate future...go ahead accept the offer and then while in canada once you cross the reqd 2 yrs worth of days, apply for PR renewal and everything will be alrite...Good luck

Just one more relevant question, is there any harm to register myself as professional engineer with provincial organization (at this moment) because they will also ask me about my landing status (as their online application format also want resume and prove of landing).

You do not need your PR card to prove your employment eligibility or anything other than entering Canada. In some cases, you may not even need it to enter Canada, but that's another subject. In all cases you described, your landing papers, COPR, is what you need to provide. Your employer should also be aware of that.
 
In the future, you do not need to mention whether or not you meet residency obligations - that's a question for CIC alone. As a permanent resident, you are legally entitled to work in Canada even if your PR card has expired. The card allows you to travel and re-enter Canada but your COPR is what confers PR status. So if your employer needs some kind of document, you may give them a copy of the COPR.
