I have been working under OWP since January while my wife started an one-year master degree program back in September.

While she is in the transit from her study permit to PGWP, how easy is for me to extend my OWP?

Also, once I have accumulated one-year working experience in Canada, can I go through CEC as the principal applicant, provided my the industry and rank I'm working in fits the requirements?

The short answer is, my wife has to hold a job in skill level 0, A or B.

Yes - you can apply as the principal applicant for CEC. And yes - the answer to your other question is accurate as well.
